Why Not Make Your Own Tortillas?

While many people prepare Mexican dishes at home, far fewer make tortillas from scratch. However, it is relatively easy to make tortillas that are both inexpensive and delicious.

The basic ingredients of the tortilla could scarcely be simpler. Corn tortillas require no more than mesa (ground field corn), water, and salt. In addition to substituting flour for mesa, flour tortilla recipes often require the addition of a fat, such as lard, butter, or olive oil. Flour tortilla dough also requires a bit more kneading.

Although a tortilla press facilities the fast and easy creation of tortillas that are uniformly round and thin, you can also use a rolling pin to form raw tortillas. After you have created these raw tortillas, you simply cook them over a medium heat on a skillet or griddle until they are slightly brown. In most cases, this will take roughly 45 seconds to a minute per side.
