Bolognese sauce is a particular formulation of ragu that takes its name from its city of origin: Bologna. It first arose in this Northern Italian cultural mecca in the 15th century.

Compared with the average ragu, Bolognese sauce has less minced tomato. It also includes only white wine and a certain amount of milk or cream.
