Version 1 was a polygonal pen tracing of the source image (generic origami horse picture from Google Images). Once the image had been traced, anchor points were adjusted to give some of the sections an overlapping feel to them.
Version 2 involved lengthening the rear leg and adjusting the tail, as well as removing the overlap (I wanted to simplify it to see how it would look - simplifying the outline also helps when it comes to scaling the image down to smaller sizes for the web).

One of my "final drafts". I really like the colour scheme here, but unfortunately the back leg on the horse is still not right.
Smaller, readable version of the previous draft for use as an icon or on the web.
My final, final draft! The colouring scheme was changed to give a fiery effect, the rear leg was adjusted, and each of the hoofs now ends with a 45-degree angle (with front-right and rear-left legs both at the same lower level). Attention to detail is key!
