1. Creamy cucumber gazpacho - Prepared in 10 minutes, this healthy and fresh gazpacho is made by blending the following ingredients: soaked raw cashews, cucumbers, full-fat coconut milk, basil pesto, lemon juice, white miso, maple syrup, garlic, salt, pepper, and mint leaves. Chill for about two hours before serving for best results. You can also top it with cucumber slices, basil leaves, and toasted pine nuts.

2. Pad-Thai salad - This vegan pad-Thai inspired dish doesn't include any variety of leaf lettuce, but instead features fresh ingredients including peeled zucchini, bean sprouts, diced green onions, sliced red bell pepper, and chopped fresh cilantro. Toss all ingredients and dress with lime juice and olive oil. Toss again and top with chopped almonds or cashews.

3. Creamy raw mushroom soup - Similar to the cucumber gazpacho, this dish can be created simply by processing all ingredients in a food processor. Use cashew milk for the soup's base and add onion, garlic, mushrooms, Nama Shoyu, lime juice, and sea salt. Garnish with diced mushrooms.
