Tamales refer to a dish that originated in Mesoamerica, the North American region that extends from Mexico to Costa Rica. Traditionally, tamales consist of a corn based dough known as masa that is stuffed with a filling before being steamed in a banana leaf or corn husk.

Tamale recipes can vary greatly, with filings including an array of meats, cheeses, fruits, vegetables, and seasonings. Some traditional recipes include the Corundas and Vaporcitos versions. The Corundas recipe features either a green or red sauce along with grilled cheese and cream, while the Vaporcitos recipe includes a thin dough wrapped in banana leaves and filled with either pork, turkey, or chicken. Another traditional recipe stems from Southeastern Mexico. This version, known as a Chipilin tamale, consists of masa colada, broth, lard, and Chipilin leafy greens from a native leguminous plant.
